Cedar Hollow Foods

The Cedar Hollow Foods manufacturing plant had specific requirements for our team due to the USDA Food Processing Standards. This project consisted of many detail-oriented aspects which included ensuring all air gaps to outdoor air or non-refrigerated spaces were sealed.

The Cedar Hollow Foods fresh ham processing facility is 33,000 SF. The entire building is refrigerated and is equipped with shipping and receiving loading docks, flash freeze rooms, freezer storage rooms, processing and packaging rooms and smoke chambers. A corporate office space was also constructed adjacent to the production facility. One critical aspect of the project was ensuring all air gaps to outdoor air or non-refrigerated spaces (including the inside of electrical conduits, anchorage points and seams) were sealed. Any deficiency in this area could lead to moisture and contamination in the facility. When construction was complete, USDA inspectors found no issues and allowed the facility to open for production as scheduled.
